The Story
Our Sipping Sommelier, L. Denise, acquired a love of wine over three years ago through a simple fluke. She thought wine pairing was a much exaggerated fad about nothing. Tiring of seeing all the articles, she set out to dispel the wine myth.
A reservation was made at a fine dining restaurant and various white wines were paired with three delicious courses. L. Denise chose white because that was familiar ground. Letting the waiter choose the specific wines for her, ranging from semi-sweet to succulently sweet, the test began.
The wines seemed to work together and were quite tasty. The proof, and intrigue, came the next morning. L. Denise did not feel like she ate the ample servings and her meal digested quite well. She was convinced to a certain extent but not totally, so the test continued.
The next night another reservation was made at a different restaurant of the same level and, you guessed it, reds wines were paired with a delicious three-course meal, including dessert. Throughout the meal, the food was heavier and richer in substance and flavor. With a full stomach and doggie bag in hand, L. Denise went home wondering how she would feel the next day. Well, morning came and her fascination with the wonderful world of wine was born.
After tasting thousands of wines throughout hundreds of wine tastings and events as well as attending intense certification classes for in-depth wine studies, L. Denise began to live her dream. Wine Nouveau, her wine consulting and education venture, was born, to future share her wonderful world of wine.
Her clients range from wine novices that want to learn the basics to wine enthusiasts that want to enhance their personal and professional entertainment to hospitality establishments that need full wine consulting and training. Wine cellar and restaurant wine list consulting is also available.
